5 Easy No Bake Christmas Cookies & Treats for Kids

As the nights draw in and the weather gets colder, there is nothing more delightful than getting into the kitchen with the kids and whipping up some treats for all the family to enjoy. Whether it’s peanut butter, marshmallows or chocolate you crave, Mrs Claus is the North Pole expert at creating sweet treats for the Scout Elves to enjoy – and we think you’ll love them, too!

So, get your aprons on and mixing bowls at the ready, here are some easy, no-bake Christmas cookies and treats for kids (& grown-ups too, of course!) to bring some added sweetness to your family this festive season.

1. Nice Cookies

(Makes 24)

Ingredients

  • 55g melted butter
  • 250g peanut butter
  • 1 tsp vanilla extract
  • 250g icing sugar
  • 25g crispy rice cereal
  • 250g melted chocolate

Instructions

  1. Beat together the butter, peanut butter, vanilla and icing sugar until smooth
  2. Carefully fold in the rice cereal
  3. Roll into ball shapes and chill for a couple of hours before dipping into the melted chocolate.
  4. Place dipped cookies on a baking tray lined with baking paper and chill until the chocolate sets.

2. Peanut Butter Rocky Road Bars

(Makes 24)

Ingredients

  • 75g butter
  • 180g smooth peanut butter
  • 350g chocolate
  • 250g mini marshmallows
  • 125g roasted peanuts (optional)
  • 60g dried unsweetened or sweetened coconut (optional)

Instructions

  1. Lightly grease a 9×9 inch baking tin and line with baking paper. If you’re using coconut, dust the bottom with 30g, or around half.
  2. In a saucepan, melt the butter and peanut butter together, before adding in the chocolate. As soon as the chocolate is melted, take it off the heat so that it doesn’t overheat.
  3. Add the marshmallows and peanuts, if using, to a large mixing bowl.
  4. Pour in the chocolate mixture and stir until the marshmallows are all covered in the chocolate mixture.
  5. Pour into the prepared pan and press down into the corners. Sprinkle the rest of the coconut on top, if you are using it.
  6. Chill in the fridge for 3-4 hours before cutting into squares or bars.

3. No-Bake Christmas Tree Cookies

(Makes 24)

Ingredients

For the trees

  • 115g butter
  • 250g icing sugar
  • 2 tbsp milk
  • 180g shredded coconut
  • ½ tsp vanilla or peppermint extract
  • Green food colouring

For the toppings

  • 125g white chocolate
  • 1 tsp butter
  • 1 tbsp milk
  • Mini sweets of your choosing

Instructions

For the trees

  1. In a large saucepan, melt the butter. Remove from the heat.
  2. Stir in the icing sugar and milk, followed by the coconut, your choice of vanilla or mint extract and enough food colouring to turn the mixture your desired shade of Christmas tree green.
  3. Shape into small balls, using the tips of your fingers to create a cone shape. It may take a few tries to get this right, so if the mixture gets cool whilst you’re working, reheat on low for a minute or two before trying again.
  4. Place on a baking sheet to set in the fridge for 2-3 hours, or in the freezer for 1 hour.

For the toppings

  1. In a small saucepan, melt the chocolate, butter and milk over a low heat until smooth.
  2. Dip the tops of your Christmas trees into the white chocolate and add a few sweets on the tip.
  3. Set in the fridge or freezer. The finished cookies can be stored at room temperature in an airtight container, or in the fridge – if you don’t eat them all first!

4. Reindeer Pops

(Makes 8)

Ingredients

  • 200g milk chocolate
  • 1 tsp vegetable oil
  • 8 red smarties
  • White and black writing icing
  • Lollipop sticks

Instructions

  1. Line a large baking tray with baking paper or foil.
  2. Lay your lollipop sticks on the tray with enough space between them
  3. Melt the milk chocolate and oil in the microwave, stirring often.
  4. Add chocolate into a piping bag, or a plastic food bag. Snip off the end and pipe a large chocolate circle, covering half of the lollipop stick. If you need a little extra help, try a cookie cutter to guide you.
  5. Let dry slightly. Use the writing icing to pipe antlers and eyes for your reindeer and add a red smartie or sweet for their nose.
  6. Let dry completely, either at room temperature or in the fridge.

5. Christmas Rice Cereal Treats

(Makes 24)

Ingredients

  • 45 g butter
  • 300g mini marshmallows
  • 180g rice cereal
  • 400g white chocolate
  • Christmas sprinkles

Instructions

  1. In a large saucepan, melt the butter over a low heat. Add the marshmallows and cook until they are melted together, stirring constantly.
  2. Take the pan off the heat and add the cereal, mixing lightly until well-coated.
  3. Press the mixture into a 13 x 9 inch tin lined with baking paper.
  4. Once the mixture has cooled completely, cut into 24 squares.
  5. Melt the chocolate in the microwave, stirring regularly.
  6. Dip ¾ of each Rice Cereal Treat into the chocolate, letting any excess run back into the bowl of chocolate. Sprinkle with Christmas sprinkles.
  7. Place on a baking tray lined with baking paper and let stand until the coating is dry.
